Zucchini Pasta

 

 

 

 

 

 

You can use Zucchini a lot of ways, but when it comes to large ones… that can be a challenge. A rather fun way though is to use them as noodles to replace of pasta. You can of course use small Zucchini’s for the dish, your noodles won’t be as long as all. This will walk you through the steps of creating Zucchini Noodles and a simple sauce for them. Once you get to be an expert at them, if you peel the Zucchini first, you can pass them off to kids and they think it is pasta.

Ingredients

  • Large Zucchini
  • 2 Onions ( or 3 - its your dish)
  • 1 Red Pepper
  • 1 cup Chicken Stock
  • 2 Italian sausages per person (you can use chicken or something else)
  • salt
  • Parmesan Cheese

Instructions

  1. Setup your Mandolin to cut the zucs. I like to set mine up so that it will produce large Spaghetti size noodles. NOTE: I have had no success at using a veggie peeler to make noodles. Everyone I have can only make very fine noodles and I don't like how they turn out when they are very fine. This is also a good time to put a pot of water on the stove and get it boiling. Don't salt the water - ya gotta trust me on this one.
  2. Cut the ends off the zucs and run them through lengthwise through the mandolin. When you get to the seeds, turn the zuc and repeat until you get all four sides fun through the mandolin. Remember, mandolins have hand guards for a reason - USE THEM!
  3. Sprinkle salt on the newly created zucchini noodles and put them in a drainer to drain for 30 minutes. This will take moisture out of the noodles and give you time to start the sauce.
  4. Heat a large pan with some oil in it, (large enough for the whole dish), and cut the onions in slices, ( I like them about the size as the noodles, but this is now your dish so do them your way).
  5. Place the onion slices in the heated pan and make sure you use medium heat. You want it hot enough to cook the onions but not to hot to burn them or make you constantly have to stir them. When they are soft add the red pepper slices. About this time is when you can add the sausages. Just leave enough time to cook whatever protein you are using.
  6. Whenever the pot of water gets to a rapid boil, you can put in the zuc noodles. Boil them only for 1 minute, you don't want to over cook them, and put them into cold water to stop cooking.
  7. When the noodles have cooled, place them in a drainer to drain while you finish the sauce.
  8. Add the chicken broth to the onions and protein and let it reduce down and get happy with what you have in the pan.
  9. When the sauce is thick and like you want it, gently stir in the noodles and warm them. Keep them in the pan long enough to get coated and warmed.
  10. Plate the dish and sprinkle with Parmesan cheese if you like. It is ready to serve
