Cholula makes the bottled hot sauce with the wooden top that is imported from Mexico. For a time they also had sold seasonings too. To me the seasonings differed from the hot sauce as it was flavors with very little bite or hot to them. That made for a great all-purpose seasoning. But alas… they quit selling the seasoning. So… the people in Dave’s Test Kitchen decided to come up with a version for themselves. A copycat version if you will. The following is the result of the hard work in our test kitchen. We won’t bore you with the hours of tasting and adjusting it took to arrive at the final result. Nor will we drone on about the subtleties of our semi-exacting process we go through with everything that comes out of our kitchen. Suffice it to say, that most wouldn’t even think about going through our efforts and quality control methods.

Ingredients
- 1/4 cup Garlic dried minced
- 3 tablespoon Kosher Salt
- 2 tablespoon Paprika
- 1 tablespoon Bell pepper dried
- 1 tablespoon Onion granulated
- 2 tablespoon Sugar
- 1 teaspoon Ancho pepper
- 1 teaspoon Citric Acid
Instructions
- If minced garlic is a little large grind it down a little. Other than that combine everything and stir until mixed.
Now how simple is that!
This version is meant to be mild with all the flavors. If you like to add a bit of heat, and you know I would, add 1 teaspoon of Chipotle to the recipe too
