Crab Frittata with Quinoa

Ingredients
- 5 eggs
- 1/3 cup cream ( you can use low fat milk but I would use whole milk)
- 5 drops Tabasco Sauce ( the hot sauce you like will be best)
- 1/2 teaspoon lemon rind
- 3 tablespoon Grated Sharp Cheddar Cheese
- 1/2 cup Quinoa cooked in stock adds lots of flavor
- 1 small onion finely diced
- 2 carrots finely diced
- 1 stalk of celery finely diced
- 1 cup Crab Meat - cooked
- salt and pepper
Instructions
- Mix the eggs, cream, lemon rind, and hot sauce together. Set aside.
- Sauteed onions, carrots and celery until soft.
- Add egg mixture to pan and scatter the crab across the top.
- Cook over low heat for about 5 minutes, add grated cheese and place under broiler to brown the top. Serve
