This is a nice variation to what you are used to in a Potato Salad. The addition of the Apple and how the other indredieants are added is magic. Well Magic the way I do it. Don’t count on the other recipes that have the same name being as good. But I wouldn’t tell you that, no not me! I would let you make all the crapy recipes until you find mine – yeah right! This one you will like and if you don’t… you are a sorry person for sure. Something tramatic must have happened in your childhood, ok get over it, that time has passed. This recipe is best done fresh. Leftovers are not the same as fresh.
Dave’s Apple Potato Salad

Ingredients
- 2 Russet Medium chopped like you would want it in a Salad
- 1 medium Red onion chopped
- 1 1/2 cup Celery chopped
- 2 medium Apples granny smith work good any you like will do - chopped like you want to see them. Smaller than spuds for me. That gets apple taste everywhere
- 2 tablespoon Lemon juice more is ok too don't be shy
- 1 cup Dill pickle chopped
- Dressing
- 1/2 cup Sugar try honey if you want
- 3/4 teaspoon Black pepper ground
- 2 tablespoon Cider Vinegar
- 1 teaspoon Perpared Mustard think Grey Poupon
- 2 tablespoon Vegetable oil
- 3 teaspoon Salt
Instructions
- Mix dressing ingrediants and set aside
- Mix salad ingredients and combine with dressing, chill and serve. I would put some of the salt in here as Potatoes really like salt – just a thought…. NOTE: when chopping apples, coat with the lemon juice, it will stop browning of them and stir frequently too before combining See so simple!
- Chopped green onions might be a nice color addition Personally, I like to leave the skins on for the potatoes and the apples. Not only is it better for you, but it is a bit more colorful, or rustic looking. You take your pick on how you want to see it. After the salad sits, taste it and see if you need to adjust any seasonings. Remember, it is really your salad now, not mine One more little idea for you to think about…Try boiling the potatoes in chicken stock. Of course homemade is best but if you must try the cubes. It will add another layer of flavor that you will smile about when people try to figure it out. Just a thought. Remember it is your salad when you make it.
