Fresh green beans pickled with fresh picked dill, ready in about an hour! Super easy to make and crunchy goodness eat them right out of the jar.
in a small pot – bring to a boil for about 1 minute the following ingredients:
1 c white vinegar
1 c water
2 t salt (we use kosher because we have it)
2 t sugar
2 t pickling spice (we make our own)
1 clove garlic (semi crushed)
In your jar:
1/2 lb of green beans
1/4 c of dill
pour liquid over beans, let sit for about two hours

2T peppercorns, 1 cinnamon stick, 2T dill seed, 1T red pepper flakes, 1T mustard seed, 1T coriander seed, 1T celery seed, 4 bay leaves, 1T dried thyme, 1T grd ginger, 1t all spice berries, 1T whole cloves, 1T mace, 1/2t cardamon seed, 1T juniper berries, 2 star ani
break/blend/crush store in an air tight jar (its the best)
What I like about this recipe, unlike other ones, is that you don’t cook the beans before dilling them. This way they stay nice and crunchy.
