Roasting vegetables on the grill is great to do and it is so simple too. In this post we will be going through the complicated intricacies of grilling Beets, as the title suggests; well OK it states it. We belong to a service that delivers organic vegetables to us and this last delivery included some very cool beets. They are Chioggia Beets with an interesting history.

First introduced to American gardeners in the late 1840s from Italy. Uniquely beautiful flesh has alternating red and white concentric rings that resemble a bull’s-eye. Very nice heirloom beet for eating and pickling. Retains markings if baked whole and sliced immediately before serving.

Ingredients

  • 1 Bunch of Beets
  • Olive Oil
  • Salt
  • Pepper

Instructions

  1. Wash beets and slice about 1/4 to 3/8ths of an inch thick. That’s right don’t worry about the skin
  2. Place in a bowl and coat with Olive Oil, salt and pepper.
  3. Place in a bowl and coat with Olive Oil, salt and pepper. Spread out on the grill in one layer and cook for about 10 minutes on each side and serve. Watch the cooking as cooking time can vary. When it looks like you want to eat it – go for it, try one and see. If you like it – it’s done!
