Salmon with Zoodles and Tomato Pesto

We have been finding very large Zucchini’s at our market lately, well actually you can find them most any time, but lately we have been experimenting with what we can do with them.

Zoodles, or Zucchini noodles, are very easy to prepare. Not much more work than cooking pasta really, but they make such a nice fresh addition to a dish, and … since they are a veggie, you don’t have to cook an additional side dish of veggies. Look in this recipe and I will provide the recipe for the Zoodles.

Who doesn’t like Pesto? Pesto doesn’t have to be the same old same old though. By that I mean most people think of Basil Pesto when they think of Pesto. But in reality, Pesto can be made out of lots of different things, similar to a vinaigrette. No, you don’t have to make a Pesto with those expensive Pine Nuts either. You can make them with a variety of different nuts, and for that matter, without nuts at all. Almonds work rather well in a Pesto for example.

This recipe uses a fresh Tomato Pesto in it. I did this for a number of reasons, primary reason we have happen to have a ton of fresh tomatoes and since I was using Zucchini, I wanted a contrast. For this dish I made the Pesto with Almonds for the nut but you can make this without the nuts if you desire and even use it as a fresh sauce in a dish. Below you will find the recipe for this Pesto.

The Salmon can be prepared anyway you like it. But for this dish, I cooked it in a stove-top smoker and used Oak to smoke it with. It comes out with a nice light smoked flavor and really stays so moist too.
