Sinful Potatoes

Ingredients
- 2 qt potatoes peeled and sliced (I never peel potatoes)
- 2 bay leaves
- 1 c butter
- 1 c green onions chopped
- 1 c sour cream
- 1 10 oz can cream of chicken soup
- 1 T salt
- 1 t pepper
- 1 c cheddar cheese (use good stuff this is a big flavor)
- 1/3 C or more cheddar for topping
Instructions
- Preheat oven to 350
- Parboil potatoes with bay leaves until almost tender.
- Remove bay leaves and drain potatoes
- Arrange potatoes in 9 x 13 inch baking pan (greased)
- In small skillet, melt butter and sauté onions till transparent
- Remove from heat. Add soup, sour cream, salt and fresh ground pepper to taste, and 1 C cheese. Pour mixture over potatoes, sprinkle with extra cheese and bake for about 30 minutes, or until tender when tested with fork.
