There are a lot of ways to make this dish and when we ate at Cafe Nikki in Santorini it was the first time in many visits to Greece that I had Tzatziki with Carrots in it. But it does add a crunch to it and a bit of color too. Turns out that adding some carrots to Tzatziki is a way to stretch the dish out some too. Personally I like a little carrot finely shredded in Tzatziki not a to much. I would stay on the low side of what this recipe says, but it is a personal choice and when you make this, make it how you want it. It is your dish after all.
