Yucca is very common in Ecuador and when we came across this Cuban dish from Three Guys fro Miami, we had to try it, and we are glad we did. I think you will like it also – let us know what you think about it.
Yucca con Ajo — Yuca with Garlic Sauce

Ingredients
- 1 1/2 lbs Yucca, peeled, halved and gut into chunks (Frozen yucca may be available in Latin markets in your area)
- 1 lime (juice from)
- 6 cloves garlic mashed into 1 teaspoon salt
- 1/3 cup lemon juice
- 1/2 cup olive oil
- 1 onion, chopped fine
Instructions
- 1. Place yucca in a saucepan; add water until yucca is just covered. Add salt and lime juice, and bring to a boil. Reduce heat, cover, and simmer until tender -- about 30 minutes. Drain.
- 2. Remove the "woody" or fibrous core from the center of the yuca
- 3. Mash garlic cloves into salt with mortar and pestle. Add garlic, lemon juice, and onions to olive oil in a separate saucepan, heat until bubbling, and then pour over yucca.
- 4. Toss the yucca and all ingredients lightly while continuing to sauté over medium heat until barely browned, but not crisp!
