We took the best of the best that there was. Then we took it to our secret test kitchen, hidden away high on a hill. This recipe is what came out of the kitchen. Be amazed! Are you thinking I want those CHIPS! You are just giving me a vegetable, and one I don’t really like either. Before you move on, take a close look, or even better; take the time to make a batch and try it. After all what do you have to loose? Besides by the time you are done making the batch of Zucchini chips you won’t want those corn chips now will you 🙂 See this recipe works in just so many ways…
Zucchini Chips

Ingredients
- 1 large Zucchini, or 6 small, shredded
- 2 Eggs, beaten
- 1 1/2 C Cheese (about 8 oz), (low fat Mozzarella)
- 1 T powdered Garlic
- 1/4 C Nutritional Yeast
- 1/2 C Parmesan
Instructions
- Preheat oven to 450F
- Grease 2 cookie sheets. Or, use the silpads on the sheets. Ok, then use parchment paper. Whatever!
- Cut the ends from the Zucchini and shred either with a grater, or a food processor and spread in a colander in the sink. Now sprinkle a bit of salt, we like Kosher, and mix it up some. Let Zucchini drain there for about 30 minutes. What you are doing in this step is drawing moisture out of the Zucchini. After the 30 minutes, rinse Zucchini thoroughly. Lay out on triple thick paper towels and cover with another triple layer of paper towels. Now press down to get the moisture out of the Zucchini. This is an important step as one of the things you are doing with this recipe is getting rid of moisture. Besides the Zucchini is already salted now too.
- Mix all the ingredients with the Zucchini and make 6 – 8 circles on greased cookie sheet(s).
- Be sure to spread them nice and thin now too
- Bake at 450F for 20 minutes. Keep an eye on them though. Loosen and flip the circles. Bake for another 5 – 10 minutes at 450
- We then with Pizza cutter or a sharp knife works great too, cut each circle into 6 pieces.
- These work out to be about 165 calories per 6 chips.
